Summer Potato Salad.

    Well-known but good: With hot summery weather outside your cunningly refined potato salad will taste especially delicious.

    Recipe for 6 persons

  • 1 kg potatoes
  • 1 glass of herb sauce
  • 1 cucumber
  • 1 small bowl of cherry tomatoes
  • 200 g pumpkin seeds
  • 1 dl herb vinegar
  • Chives
  • 1 small onion
  • Salt and pepper

  • Cook potatoes in salted water
  • Peel the cucumber, cut it into pieces, salt
  • Halve the cherry tomatoes and put into a large bowl
  • Chop up the onion and the chives, add it to the tomatoes together with herb sauce and mix well
  • Peel the cooked potatoes, cut into slices and add to the bowl
  • Pour off the water from the cucumber pieces and add them to the bowl
  • Pour 1 dl of herb vinegar over the salad
  • Carefully mix
  • Leave to stand for one hour
  • Before serving, roast the pumpkin seeds in a frying pan
  • Mix part of the roasted seeds into the salad, keep the rest as garnish
  • Season the salad with salt, pepper, and/or vinegar if needed, and decorate with pumpkin seeds

  • Use zucchetti instead of cucumbers
  • Use dried tomatoes instead of cherry tomatoes
